GRAMMY'S PIKELETS

165 gms low protein mix - 0.7g pro/2 units
4 level tspn baking powder - free
1/3 cup sugar - free
Egg replacer equivalent to one egg - free
Water to mix - free
Oil for cooking - free

Sift mix and baking powder about four times. Add to sugar into a bowl. Mix made up egg replacer into the bowl. Add enough water to make a thick batter. Beat well until smooth. Heat griddle or pan with a smear of oil. Drop the mixture from the point of a tablespoon. Turn over when bubbles appear Allow to brown on the other side Remove and place on a tea towel on a cake cooler.

Can be eaten hot, spread with milk-free margarine and sprinkled with Twinkle sprinkles or cold. The Orange and Honey sauce makes them a delicious dessert also.

Honey and Orange Sauce

Makes about 150 mls sauce

50 gms of runny honey - free
100ml of fresh orange juice - 1g pro/1 unit
1 tspn cornflour - free
2 tspn water - free

Bring honey and orange juice to the boil in a small saucepan. Mix cornflour and water then add slowly to the saucepan stirring constantly until the sauce thickens serve hot or cold.
